You might replace the Sauternes with a softer wine from the Loire, Bergerac or Jurançon regions or a California Sauvignon Blanc.

Great on tartines and toast, it pairs well with nuts, apricots and pears. In recipes, it complements the flavor of beef, veal, venison, beets, arugula and sautéed onions.
